The displayed price for a menu or wine tasting is indicative only.
The exact cost of the products will be billed to the exact amount based on receipts from the stores or wine merchants.
You pay only for the products you consume, plus the chef / delivery / service fee.
This setup allows you to enjoy a customized meal or wine tasting on board while complying with regulations: no products are resold, and the service is strictly a service provision.
